Videos 'showing' FOV are fundamentally flawed. People with different size screens and/or seating position won't see the same thing you do, even if they run the video fullscreen (and I bet most people don't even do that, just playing the small embedded video instead). Perception of perspective absolutely changes with apparent image size.
The only way to do FOV videos is to show the whole setup including the driver. This is my brother a long time ago on my setup. I think it was either 17 or 20° V-Fov. But you can see the relationship between the steering wheel and the on-screen dashboard and can guess where the top of the windshield would end.
not in a million years i will be capable to drive a car which the wheel stands in my hand and cockpit waves. Not even if i try to concentrate in the road only. But with triple screens you can disable that feature look to apex (or something like this) which make the camera "follow" the driver look but in fact follows the wheel. I tried this once and makes me feel nausea and could not make a single lap.
