I saw and went into this display at the 2006 British motorshow. Have some nice close up pictures too, fantastic display.
The F1 design museum in the UK (special display in 2006) also had an actual Renault R25 which had half the car cutaway.
I've been researching cutaway cars online and there seems to be quite a market for cutting cars in various forms.
I haven't seen many real cutaways models at all, in fact the only ones I have seen were the 2006 BAR and R25 I mentioned above. When I used to work for Mercedes we had a mock-up MP4/18 which had part of the left sidepod cut away, but that was only for easy access into the cockpit! I'm speaking only of F1 of course, but if you have more pictures of real-life F1 cars (mock-up or otherwise) cutaways I'd be interested in seeing them.
