Not every useful device needs to specifically designed for simracing. These from the recent CES:

TransluSense Luminae "keyboard". I think this was THE last gadget standing. The idea of designing one's own keyboard layout and/or button box layout for use with rFactor2 is intriguing. One of the "last century's keyboard assumptions" they shouldn't have crushed is that they should be reasonably affordable. This reports $499(!) for the larger device...http://lastgadgetstanding.com/2012/12/02/luminae-keyboard/
TransluSense's own site does not reveal prices either but shows a smaller version that might end up being a smidge cheaper...http://www.translusense.com/

The other one that I found intriguing for its potential for game control is Tobii's Gaze-Interaction: "...Eyes on, and more information will appear," and "Get details on the weather, clock, stocks, tweets, status updates, and so on, just by looking at an icon." The imagination just red-lines for how it might help one's simracing! And according to this, where you look doesn't have to be on-screen: "Expand your screen by accessing off-screen menus and other items that are not visible at your desktop. Make them appear when you look at a specific point on or outside the screen. Important information can appear where you are looking and follow your gaze. It can be reminders, battery time, new messages or other critical information." Could you just layout some game-command icons on a chart, mount it next to your monitor, program responses for those locations, et voila, a gaze-interactive button box?

This fuels the imagination as it is but for those with special needs, could this help someone experience the world of virtual motorsports by making rFactor2 accessible?
