After the new update 1.09, the McLaren MP4 / 8 now switches automatically, even though this function is off. :-(

By 'switches' I assume you are referring to the gear changes. I am pretty sure it was a fully automatic gearbox. Meaning, you don't shift it, it shifts for you. One of the items banned after a short time, like the Williams FW14 with the Active Suspension.
but back to rF2. You may have to reset your options in the UI.

MP4/13 as well as all other cars of that era had no TC or ABS since those had been made illegal.
It is not an easy car to drive yes, but it is an F1 car after all.
Built to a new set of regulations the car lacked mechanical grip meaning there was a big discrepancy between low and high speed performance.
You will need to regulate the throttle yourself.

No traction control allowed in 1998 as it was banned in 1994. Of course "it ain't cheatin until yer caught" is the unwritten rule of top level sports and it was alleged that several teams indeed had traction control built into their ECU's so the FIA lifted the ban in 2001, and in 2008 an FIA ECU that prevented Traction Control was mandated. As hybrids came into play it's likely that traction control can be enabled on the MGU-K through some clever bits of code.

Tuning the dif, spring, Antirollbar damper settings will help as does upshifting just before throttle application on the exit. Or just add a little TC and practice a bit turning it down.

Adjusting the throttle sensitivity helps too (in the controller settings).

    Great cars! Joy to drive.

I hope we get PBR shaders to these cars too :)
