I have made an update for an existing mod and added my own drivers with their own filters and vehicle files. In game the AI edit button is greyed out for me. Are there any files I need to add to my carset to give my drivers different stats?

Did you add a Talent File for your new Drivers?
If they have a new Class in the veh Files, you can add a new Talent File for them or, if they use an existing Class, you can add them to the existing Talent File for that Class and add the edited Talent File into the Update Mas File.
    That should work.

I will try grabbing one from an existing mod to edit it I guess then? Talent file is an RCD file?

    Yes its an RCD file.

The AI edit button can just be used for created virtual drivers.

    Which mod have you reworked?

The Update Mas File about that we are talking, is included into the Update rfcmp that everybody can create, to update a Mod.

No, you first have to create the Files that you want to use for the Update.
Then you have to pack them into a mas File and create the Update rfcmp with the MAS2.exe or MAS2_x64.exe (can be found in the Folder ..\rFactor 2\Support\Tools).
A kind of Step by Step Manual about how to create an Update rfcmp, can be found on my rF2 Tools Website
    http://meetme.bplaced.net/rF2_onlineTools/
Scroll to the Bottom and you'll see the Link
