For new people I would suggest the Le Mans_2017 track. It has some very long straights that give you time to pay attention to things in the mutlifunction display, make adjustments for the next pitstop, etc. With a lot of the shorter tracks, you only have a few moments to glance at the info displays. The length of Le Mans gives you a lot of time to learn about the car you're driving.
