Everytime I start the sim the screen resolution has reset itself back to 1024 x 768. This is very annoying that I must change the resolution every single time back to 1280 x 1024. How can I make it keep this resolution all the time?
Are you setting the screen resolution in the game? If you are, try going through the Configure Sim button in the launcher instead and see if that helps.
