With a GTX 560, you should be able to go with max settings. Personally, I'm on an HD 6870, which I hear is similar to the 560, and I'm running at max. with no trouble.

So, I'd say max. yourself out, and see how it goes.

Use the "canned" Program Settings for rFactor2 as provided in the NVIDIA Control Panel supplied with the latest driver (296.10)... you'll be glad you did. I gained ~5-10 fps by using them with my EVGA GTX 560 Ti.

Mine runs well with level 4 AA, 16XAF, shadows high, shadow blur off, wind effects off, sync off, and everything else maxxed at 1920x1080.

Try using the 295.51 driver instead of the newest 296.10.
I noticed that my GTX560Ti cards developed an ever so slight stutter with the later driver.
I tried a bunch of things (dropping setting to lowest, turning off all the eye-candy, etc)...nothing got rid of it until I reverted to 295.51.
    It's glass smooth again.
The peak framerate will be just a tad lower than the newest driver...but it's so smooth that you won't miss a few frames.

My settings are below in the link along with a video link to show smoothness
