It depends on your perception what does the good handling or good physics mean. Those who are picky on physics tends to belong to few categories. Some just needs cars to compliment their driving. Some has more critical and more subtle views on how the cars should work. And some thinks cars should be hardcore difficult, but those basically don't exist in simracing anymore. For example, tell us one or a few cars which you think are properly simulated. It would be good reference to base recommendations.

In this video Michi Hoyer comments that the Formula Pro is actually one of the best cars ever developed for rF2, for being very dynamic and sensitive to setup changes. He mentions in particular how suspensions and other settings affect aerodynamics, drag and top speeds in the Formula Pro car, while for instance in the Formula Sim Racing car only the wings seem to have a significant aerodynamic effect.
