    Can SimHub give audible warnings?

A buzzer/beep when hitting 100% FFB would (imo) be better than a flickering gauge.

You could do that with any plugin. It's still a matter of degrees, as unless you have a 50Nm wheel you'll still get some clipping.

For me this is where traditional telemetry like motec actually shines. It's easy to put clipping into context with it.

I'd like to know how to setup the ffb channel in motec and how to see clipping

As long as you have DAMPlugin (a recent version, no reason not to have the latest version) FFB is logged in it.

In i2Pro create a new time/distance graph, or edit an existing one, and add the 'FFB Output' channel.

It'll show up as a squiggly line like the rest of them. Clipping is when it's stuck at the top or bottom of the graph (-100 or 100), if it does that during normal cornering you probably need to reduce the FFB Multiplier in the game. It's ok to have clipping over big kerb strikes or collisions, because feedback doesn't really matter then.
