Well, don't expect full details at 144 Hz...but yeah, should work, maybe 60 to 70 fps depending on CPU load and details activated.
I'm waiting for 3090 (or 3080ti whatever this is called) to do what you propose. Currently triple 1960*1200 with 1080ti and that gives around 50-140fps. I would say if you are going to spend money on fairly expensive monitors might as well get the gfx card to support them. Keep in mind that rf2 frame rates are quite variable depending on circumstances.
I made it with 3 Asus PG279Q @165Hz with a 2080 Ti, then with a SLI of 2080 Ti and I hade more than 200 FPS. Now I'm using a super ultrawide (32:9 1440p @120Hz) and I have more than 200 FPS as well (I cap to 120 actually). No need to wait for 3080 series, 2080 Ti is powerful enough.
