Just wondering if you use 3 x 1440p monitors and if so with which GPU. Do you have o turn the eye candy setting down quite a lot and what sort of FPS do you get?

Thinking of getting either 27 or 32 inch

I run triple 32 inch 1440p, with a 2080ti. I run the blingbling at medium to low and a fps cap of 131fps. I could probably run everything on medium, but I choose not to because I dont want to take a risk with respect to competitions and the heavy load of suddenly having more cars on screen. The only reason I got 1440p is because I wanted flat 32 inch screens, and they are only available in 1440p. I've raced triple 1080p 32 inch at a friends and they were also great to drive on, and the total budget is quite a bit less.

Triple 1440p is generally considered the domain of GTX 1080ti and above.

I'm currently running triple 4k on a GTX 1080 with eye candy turned down. It is working better than I hoped, am able to have 15 AI at Sebring and still get nearly 60 fps on a standing start which, of course, improves to above 60 fps after a couple laps.

Adding another data point for you:
    I run 3x1080 monitors (144hz)
    GTX 2080 Super
    i7 9700k @5Ghz

My settings are mostly medium if I recall correctly except for reflections which are low, and car interior and track details which are high (I'm probably not using the right terminology).

My settings are tuned for a minimum of 120 fps once in race conditions to ensure I have no motion blur (which makes a HUGE difference, for me) using this tool (https://www.monitortests.com/forum/Thread-Strobelight-LightBoost-Utility-for-AMD-ATI-and-NVIDIA).
